Left over chicken

Leftover chicken often provides a challenge to come up with something which is not curry nor just chicken and pickles. There is nothing wrong with these delicious meals but sometimes you just need something a bit different!

We had a roast on Sunday, and after searching through all my cookbooks and delving into the larder/ fridge , this is what I made with a nod to Nigel Slater……

1 pot or 300ml creme fraiche ( low fat in our case!)
All left over chicken morsels, torn into pieces
4 chopped spring onions
I microplaned clove garlic
1 large handful coarsely grated cheddar
1 heaped teaspoon dried tarragon

2 slices of bread , blitz to a crumb
2 tablespoon grated parmesan

Lightly fry garlic and onion until soft
Mix all the ingredients together with seasoning.
Pile in a suitable oven dish
Liberally coat top with breadcrumbs and sprinkle on parmesan

Bake at 200c for 20 mins until golden and bubbling.

Serve with green veg and jacket spud.

Gobble up !
