My heaven in a breakfast

Sunday breakfast calls out for leisurely indulgence and a shift away from the rushed weetabix and toast of the weekday.It is probably the only time baking in pyjamas also feels acceptable !

This morning’s family treat was Date and Orange muffins followed with melon, stem ginger and yoghurt. A light breakfast as we are off in a bit to meet friends for a stomp / scooter around some gardens and a bacon roll lunch.

I adapted a Nigella’s “Christmas morning muffins” from How To Be A Domestic Goddess by using date instead of cranberry and addition of orange zest:

200g plain flour
3 tsp baking powder
1/2 tsp bicarbonate of soda
75g demerera sugar
Zest and juice of a small orange
Good grating nutmeg
Approximately 50 ml milk
60g melted butter
1 large egg
150g chopped dates

Mix all dry ingredients
Beat melted butter, milk, egg and orange juice together
Add wet ingredients to dry and stir together to make a lumpy batter
Divide into 12 muffin cases
Bake for 20 minutes at 200c

Devour with butter!
