We love bananas but when I bought them on Tuesday then forgot and bought them again on Thursday, we now have a mountain of them to work our way through! There was only one thing for it….banana loaf. Unfortunately my best recipe only calls for two so we are just going to have to be more inventive this weekend!

So the Hummingbird bakery banana loaf is cooking , smelling the house and hopefully will cool enough for my neighbours who are popping round for coffee this morning. Being full time Mum is not all coffee mornings, cakes and lunches ( this is for you husband dear if reading!) but once in a while it is good to stop and have female company to gossip etc .
Hummingbird Bakery’s Banana Loaf
270g soft light brown sugar
200g mashed banana ( about 2)
280g plain flour
1tsp baking powder
1tsp bicarbonate of soda
1 tsp cinnamon
1tsp ground ginger
140g melted butter
Beat eggs with sugar then add banana and beat until well mixed.
Beat in dry ingredients
Beat in melted butter
Pour into 23×13 cm lined loaf tin
Bake at 170c for about 1 hour
Cool slightly in tin then turn out to cool completely
