No egg no dairy sponge!!!!

Ok so how excited can one mother be…VERY! ! ! I have now cooked several recipes for dairy free and egg free sponge cake and most have either gone in the bin immediately or after consideration and a strong after taste of baking powder have gone to the bin too ! Not to be defeated by my son’s allergies to dairy and egg amongst other things and not to feel guilty about him missing out on treats , I am pleased to announce I have cooked, consumed, given to neighbours to try and successfully watch my 11/2 year old devour his first yummy egg and dairy free sponge cake. I even took it into my local cake shop and the award winning chef tried and took the recipe as felt it was better than his own!

Thanks to the blog No Eggs! and their post Victoria sponge cake , we are a happy family with now endless possiblilities for cake! Their recipe is as follows but some tweaking for dairy allergy as well

Victoria Sandwich sponge recipe

Serves 8

The Ingredients:

For the cake

10oz Self raising flour
6oz Caster sugar ( I used golden caster hence why sponge slightly darker)
¼ tsp Salt
1 tsp Bicarbonate of soda
½ pint Oatly ( oat milk readily available in supermarkets)
¼ pint Corn oil ( I used sunflower oil)
3 tbsp Golden syrup
1 tsp Vanilla essence( I replaced with zest of an orange)

For the filling

3 1/2 oz PURE
5 oz icing sugar
drop of vanilla essence
6 tbsp nice Jam
The Method:

Pre heat your oven to 180C Gas mark 4
Line the base of 2 X 7 inch cake tin with baking paper
Sift the flour, sugar and salt in to a bowl and make a well in the centre
Mix the bicarbonate of soda with a tbsp of the milk and pour in to the well
Add the rest of the milk along with the oil, golden syrup and vanilla essence and beat together to make a batter
Add the mixture to cake tins and cook in the oven for 20-25 minutes (until they bounce back when touched or when a skewer is inserted it comes out clean)

Now I did cupcakes and quantity was enough for 20.
The following day having been kept in an air tight container they are still moist , slighty sticky in a good way and springy

  1. Now for the nut allergy sufferer, can you make a nut free macaron? Susana tried with ground toasted pumpkin seeds… .not something to serve to non relatives who dote on their granddaughter! Will try the cake though.
