Store cupboard chestnut and bacon pasta

What to cook? A day of rushing around, feeding the kids and had forgotten that we need something to eat too!

Mmmmm packet of chestnuts, bacon ……ahh pasta dish!It is meant to be Spring but someone failed to switch the heat on out there and it feels like we have bypassed summer altogether in favour of autumn chestnuts.

So having had a mooch around the internet for inspiration I came up with this….

Chestnut & bacon pasta

150g tagliatelle
200g vacuum pack chestnuts
4 rashers bacon
3 tbsp crème fraîche
1 clove garlic finely chopped or microplane
1 tbsp chopped flat leaf parsley
1 ladle of pasta water ( apparently the starch in the water helps sauce cling to pasta)
Olive oil
Parmesan

Cook pasta
Fry bacon and chop
Using a small splash of oil , lightly sauté garlic and chestnuts. Mash chestnuts with a fork. Add crème fraîche and parsley. Add pasta cooking water to loosen and help sauce stick to the pasta . Season. Add the pasta to the sauce and combine.
Dish up and sprinkle with the bacon, parmesan and a good grind of pepper.
