Three of us get together on a fortnightly basis to cook each other lunch and have a good old natter before rushing off to pick up kids from various schools. It was my turn this week to cook lunch so I made some foccacia and a fig, feta and pomegranate salad.
I took the recipe for the salad from here but the amount of almonds they suggested seemed a little excessive!
Fig,Feta and Pomegranate Salad
4 handfuls spinach leaf
6 quartered dried figs
300g feta , broken into cubes
1tsp cumin seed, toasted
2 handfuls almond flakes , toasted
2 tablespoon olive oil
Squeeze of lemon
Combine feta, cumin, lemon and olive oil and leave to marinade for 30 minutes
