Hummingbird Bakery Chocolate Brownies

The call came. “Come to my house I need chocolate” . So off I went to a friend’s house with another to console her with chocolate following some bad news. Now I could have taken a bar of Cadburys but what I thought she needed and actually then ended up consuming with gusto was a decent brownie still warm and slightly gooey from the oven.

Now we all need a decent recipe and this one comes from London’s Hummingbird Cafe and its cookbooks.There are no frills with this one, no added nuts, no added fruit and no adornments. It is just plain sugar, butter , eggs, flour and a bar of chocolate. Made in 10 minutes, baked in 30 and consumed within seconds!

33 x 23 x 5-cm baking tray, lined with greaseproof
200g roughly broken up dark chocolate ( I used milk chocolate for a change)
175g unsalted butter
325g caster sugar
130g plain flour
3 eggs
icing sugar, to decorate if desired

Melt chocolate and butter in a bowl over a saucepan of boiling water
Stir in sugar
Stir in flour
Stir in eggs until all well combined
Pour into the tin and bake at 170c for 30 minutes until top is cracked , flakey but still soft in middle
Leave to cool then portion up and nibble.
