School fete doughnut cupcakes

In the sweltering heat of Saturday , we had the school fete with all the usuals of bouncy castle, guess the name of the teddy, lucky dips, tombolas , raffles….. It would appear that my son has a winning streak as on leaving school he was loaded with a big bag of 3 prizes. He won the guess the name competition and we now have a teddy called Ocean at home; he won a football in the raffle and then a nerf gun. Just imagine my delight at the nerf gun which have until now avoided. I have already been shot in the bottom so it is only time until it is confiscated!

It was my turn for baking a few cakes for the stall and here we have some yummy doughnut cupcakes!

200g softened butter
200g sugar
2 eggs plus 1 yolk
300g self raising flour
100ml milk
1/2 teaspoon baking powder
12 teaspoon of jams

Preheat the oven to 180c/ 160c fan / gas mark 4
Beat everything but jam together until a smooth batter forms
Fill paper case 2/3 full , put on a teaspoon of jam and cover with another tablespoon of batter
Will be enough for about 12 cakes

Bake for 3o minutes and cool
Decorate as desired or sprinkle with sugar.

I may have to try this recipe next though as looks delicious too ……
