Eggless and dairy free pancakes

Yeah! I did not think it could be done but we are eating pancakes without egg and dairy for breakfast with my allergy toddler! They have exactly same taste and texture as my usual breakfast pancakes. They do need the sugar in the mix to counteract the taste of baking powder. The next time I make them I am going to try self raising flour and miss out the baking powder to see what happens….

6 oz plain flour
1 tbsp sugar
2 tsp baking powder
9 floz Oat Milk or equivalent
2 tbsp water
2 tbsp oil
oil for cooking

Whisk until a smooth bubbly batter and ladle spoonfuls into sizzling pan. When batter is bubbling on the surface , flip pancake and cook until lightly golden underneath. Serve
