Flapjack heaven

This week , my sons and I have picnicked each day in forests, by great houses and today our favourite for scooting, cups of tea and gentle strolls with their friends and mine , West Dean Gardens( see post ” Recipe for a great morning”)

We have almost run out of picnic treats so in 5 minutes I whizzed up these for all to share

Golden Flapjacks

175g butter or dairy free PURE
175g golden syrup
175g golden caster sugar
300g porridge oats
75g plain flour
finely grated zest of a small lemon

Put the butter, syrup and sugar in a pan and gently melt to a golden liquid. Stir in rest of ingredients.

Place mix into a 20cm x20 cm lined tin

Bake for 40 minutes at 180c

Leave to cool in tin for at least 10 minutes before cutting into 16 squares or fewer if greedy!
