I often just have cheese and a few crackers for lunch . Today I made some oat biscuits with the copious amount of oat meal I have in the cupboard for some reason .
I found this recipe in the Guardian (http://www.theguardian.com/lifeandstyle/2007/oct/06/foodanddrink.recipes1) was a bit sceptical but was proved wrong! Quick and easy to make and much nicer than shop bought ones. It makes about 20 but decidedly less in the tin now as so delicious with cheese. I added dried oregano but next time might add a grating of parmesan too.
140g medium oatmeal
140g porridge oats
10 twists of black pepper
½ tsp salt
A small handful of sunflower or other seeds (optional)
75ml extra-virgin olive oil
Mix dry ingredients and stir in oil
Mix in enough boiling water to make a dough, add more oatmeal if too loose
Roll out to 5mm thick and cut into desired shape
Bake at 180c for 20 minutes then flip biscuits over and bake for another 10 minutes.
