Bara Brith / torta negra


For feeding the hungry monster after school this week , I made the welsh bara brith or welsh Argentinian settlers torta negra.

I think we eat too much white sugar in our diets and as loaded with dried fruit , halved the sugar in the recipe . It would be fantastic with butter thickly spread on it too but we have it au naturel here….

Bara Brith

450g mixed dried fruit ( I had chopped apricots , raisins and currants in the cupboard)
Mug of hot black tea
100g butter
2 tbsp marmelade
450g self raising flour
175g light soft brown sugar ( I halved)
2 eggs
1 tsp ground cinnamon
1 tsp ground ginger
4 tbsp milk

Soak dried fruit over night in the tea then strain excess away
Mix dried ingredients and incorporate into fruit
melt butter and marmelade , add milk and beat in eggs
Stir wet ingredients into dry
batter should softly drop from spoon ; if not add a splash more milk.
Put batter into a lined 2 lb loaf tin
Bake at 180c for 1 -1 1/4 hrs until skewer inserts comes out clean.
