Exploding artichokes

It is the last crop from last season and has been lying in wait for a sunny day to dig up its knobbly treasure. Well it was quite unexpected what was lurking underneath ! Kilograms and kilograms of artichokes, exploding from everywhere! Well I gave away 5 bags to friends and still have enough for the next 10 days!
I tried them in soup. My husband loved it but I was not keen. So here is my next adventure into trying to convince myself that they are delicious!

Artichoke , leek and bacon gratin.

Serves 2

300g peeled and sliced Jerusalem artichoke
2 sliced leeks
1 sliced onion
2 chopped garlic cloves
A greedy 6 bacon rashers, fried and chopped
20g smoked applewood cheddar or unsmoked, grated
1 slice bread made into breadcrumbs
4 tablespoon creme fraiche
Dried sage
Veg stock
Olive oil

Fry leeks ,onions and garlic in splash of oil until soft
Add sliced artichoke and saute for another 5 minutes
Add stock to cover vegetables and simmer until artichokes are tender and stock is reduced to a few tablespoons
Stir in creme fraiche, sage and chopped bacon
Put into gratin dish
Sprinkle bread crumbs and cheese on surface
Bake at 200c for 20-25 minutes until bubbling ang toasted a golden brown

Verdict : yummy yummy in my tummy!
