Raisin and cinnamon loaf

Now: cake!!!!!!!! Eat me eat me eat me it says!

Hummingbird bakery cinnamon and raisin loaf

190g unsalted butter

190g caster sugar

3 eggs

190g plain flour

1 tsp baking powder

1/4 tsp salt

25ml soured cream ( I used half fat creme fraiche but guess you could use natural yoghurt as well)

1 tsp vanilla essence

1 tbsp ground cinnamon

70g raisins ( I used mixed dried fruit)

Cream butter and sugar until light and fluffy
Beat in eggs , one at a time
Mix in flour, baking powder and salt
Mix in sour cream and vanilla extract
Remove 200g of mix and beat in cinnamon
Add fruit to remaining mix
Pour raisin mix into the prepared 2lb loaf tin and dollop cinnamon mix on top
Swirl both mixes gently to get her using a skewer to creat a marble effect.
bake at 170c for 50 minutes or until golden and knife comes out cleanly after insertion.
