Chocolate bourbon cupcakes

I must admit these were a bribe for my eldest to tidy and my youngest to do his speech therapy exercises! It was also an experiment in what happens to tesco bourbon which are dairy/ egg free , when chopped up in cake batter. It gave some chocolate  nuggets without being real chocolate which my son cannot have. I decorated them with butter icing made from Pure and a bit of bourbon

For 12 cupcakes

200g self raising

100g caster sugar

1/2 teaspoon bicarbonate of soda

1/2 teaspoon good vanilla extract

100 ml vegetable oil

150 ml oat milk

8 chopped Tesco Bourbon biscuit

Stir wet ingredients into dry until thoroughly combined
Stir in Bourbon biscuits
Pour into chosen lined tin or 12 cupcake cases

Bake 180c for 20 minutes until golden and skewer can be removed cleanly

    • Yes poor mite. Chocolate is mostly made with milk or “may contain”on ingredients which he is not allowed either. Not cocoa fortunately so can flavour things. Hopefully one day in near future may tolerate milk as last bloods showed milk allergy reducing. 🙂
